We all know that breakfast is the most important meal of the day. It is however so busy in my household in the morning, that my family mostly only eat a breakfast cereal or some rusks with coffee or tea.
It is however not so difficult and time consuming to make something cute and delicious for breakfast and it does not always have to take much time!
Here are a couple of ideas:
Cut thick slices of sweet peppers and fry them in a little bit of butter for 2 minutes on each side. Break an egg into each of the sweet pepper “egg rings” and fry until the eggs are cooked to your liking. (I always add 5ml water to the pan in which a fry my eggs and cover it with a lid. The eggs will cook perfect without the bottom of the eggs being burned.) Serve with toast.
Boil some eggs. Use a cookie cutter to cut out cute spoons or hearts to serve with the boiled eggs.
Pre-heat the oven to 180ºC. Line large muffin pans with bread to form a basket. Fry 250g of bacon and one onion till crisp. Spoon the bacon mixture into the breadbaskets. Bake in the pre-heated oven for 8 minutes. Meanwhile beat together 6 eggs, 50ml cream, salt and black pepper. Pour over Breadbaskets and top with some grated cheddar, bake for another 12 -15 minutes, till egg mixture has set. Serve with some tomato or fried mushrooms.
