One great thing about winter is that it is time for citrus fruit. I love lemons and always have some available, even if it has to
be the plastic version.
Oranges are also now in abundance and affordable. I made this chicken dish with oranges and it was really amazing.
8 to 10 chicken thighs or drumsticks
salt and black pepper
30ml sunflower oil
2 garlic cloves, crushed
4 shallots or baby onions, peeled and halved
200ml chicken stock
juice and zest of 1 orange
800g baby potatoes, washed and halved
1 cinnamon stick
1 orange, quartered
Season the chicken and fry in a heavy-based pot,
until brown on both sides. Remove from the pot.
Add the shallots and garlic to the pot and fry on a
low heat, till soft.
Mix the chicken stock, juice and zest of the 1 orange
and marmalade together and add to the pot.
Return the chicken to the pot with the baby potatoes,
cloves and cinnamon stick. Simmer for approximately 45 minutes, until the
chicken is cooked and the potatoes are tender.
Add the quartered orange and cook for another 5
Remove the cinnamon stick and garnish with the thyme.
