Most of my great memories include food. Food played an important role in my life for as long as I can remember. I have a lot of food memories related to Easter.
Just like Christmas, everyone has their own traditions over Easter. As a child my sister and brother, who are both much older than me, would come to visit with their families. My nephews and niece were like my younger brothers and sister. My Mom used to bake biscuits for Easter weekend and she would always make a leg of lamb on Easter Sunday. I can also remember that the children would have a midnight feast on Saturday night, which included loads of biscuits, chocolates and condensed milk. My oldest nephew always started jumping up and down when he got excited and he always got very excited at the thought of our midnight feast. This year he will be having Easter in heaven, since he passed away in a motor accident three weeks ago, so this Easter is a sad one for my family.
Once I had my own family, I created my own traditions. It also included biscuits, such as these chocolate biscuits or these sweet biscuits. These chocolate crunchies are another favourite.
I always bake a chocolate cake or cupcakes for Easter. My favourite chocolate cake is definitely this Almond chocolate cake, but the chocolate mousse cake is a close second option.
Just like my Mother I also make a roast on Easter Sunday. Most often it will be a lamb roast such as this leg of lamb cooked in muscadel or a rack of lamb with lemon and garlic. Sometimes I prefer a beef roast such as this roast beef with a spicey tomato sauce or sometimes I prefer making pork, such as this pork roast in orange.
Of course there are also always Easter eggs!
