Wraps with roasted leg of lamb and mango and mint salsa

Wraps filled with roasted leg of lamb served with a mango and mint salsa
  • 1 large mango, peeled and cubed
  • ½ English cucumber, cubed
  • 10g of fresh mint, torn
  • 30ml sweet chilli sauce
  • 8 medium sized tortillas
  • 125g cream cheese (optional)
  • 500 to 600g cooked leg of lamb, sliced
  1. Mix the mango cubes, cucumber cubes, mint and sweet chilli sauce together.
  2. Heat the tortillas slightly.
  3. Spread some cream cheese onto the middle of each tortilla. (if you are using this)
  4. Top with slices of the roasted lamb.
  5. Add some of the mango and mint salsa on top and roll up to form a wrap.
