Chickpea salad with pea shoots, peppers, pomegranates and feta

An easy recipe for a chickpea salad with pea shoots, peppers, pomegranates and feta
Ingredients
  • 2 x 400g tins chickpeas, drained
  • ½ a red onion, finely sliced
  • 1 large sweet yellow pepper, seeded and cubed
  • 180ml pomegranate seeds
  • 100g feta cheese, crumbled
  • 10g pea shoots
  • salt and pepper to taste
Instructions
  1. Mix all the ingredients together.
  2. Let the salad stand for 15 to 30 minutes.
  3. Season with salt and pepper and serve at room temperature.
