Most of the regular readers of my blog will know by now that I am participating in a competition sponsored by Pick n Pay, called Freshlyblogged. I am really having fun with this competition! It inspires me to use ingredients in ways I would have never tried previously. It is also amazing to see what the other bloggers are making with the same ingredients. All the participants are very talented and it is wonderful to read the different recipes using the same ingredients.
Although I am enjoying the competition tremendously, I must admit that it is definitely not an easy competition. We receive the list of ingredients on Fridays. Thereafter we have to buy the ingredients, make the dish, take photos and post the recipe onto the Freshlyblogged website by the next Wednesday. Sometimes your first attempt is not successful and then you have to work out another recipe and test this one again!
For this week’s challenge the main ingredient was tinned Lucky Star Pilchards. I decided to make a fish breyani and wrap the breyani in cabbage leaves. The main contributing factor to this decision was the fact we could use any amount of spices. Breyani is a spicy dish and needs a lot of spices. It was very delicious and I must admit I was surprised that I was able to make such a superb dish with a few and very affordable ingredients.
We could only add two additional fresh ingredients and I used onions and fresh garlic. I would have preferred to use PnP’s garlic, ginger and dhania paste but will add this next time. A dash of lemon juice would also be a lovely addition to the dish.
This sounds like a complicated dish, but it is extremely easy and quick to make. I am sure that anybody with basic cooking skills will be able to recreate this dish easily!
For the next competition I made dessert! Look out for it next week!
