Bobotie is an old favourite dish inSouth Africa. The dish traditionally consists of spiced meat with some dried fruit such as raisins or apricots, baked with an egg-based topping.
This bobotie contains lentils and is and vegetarian alternative that is perfect for meatless Mondays.
3 slices brown bread
1 onion, finely chopped
1 garlic clove, minced
15ml jeera powder
30ml curry powder
10ml cajun spice
salt and black pepper
15ml grated lemon rind
5ml brown sugar
45ml fruit chutney
Pre-heat the oven to 180ºC.
Cook the lentils according to packet instructions.
Soak the bread in the milk.
Heat the oil over medium heat and fry the onion until soft and fragrant.
Add the garlic, jeera, curry and cajun and fry for another minute.
Add the onion mixture to the lentils and mix well.
Season with salt and pepper to taste.
Squeeze the bread out and reserve the milk. Mix the bread with the turmeric, lemon rind, sugar, chutney and sultanas and add to the lentil mixture and mix well.
Spoon the mixture into a buttered ovenproof dish.
Mix the reserved milk with the cream and eggs. Season lightly and pour over the lentil mixture.
Bake in the pre-heated oven for 30 to 40 minutes or until the topping has set.
Serve with rice and sambals or salad.
