I love all television programs that feature on Wednesday nights and I don’t really have time to make food! On Wednesday nights I make meals that can be prepared in minutes!!
I love cranberries, but I totally forgot about it, until Sam of Drizzle and Dip posted her lovely banana bread with cranberries and nuts!
So my love for cranberries came back and I made this lovely quick pork chops.
I always see chefs naming their favourite ingredients and then think of mine… lemon, garlic, basil, coconut milk, thyme, jeera powder, coriander spice, fresh ginger, butter, olive oil, cranberries, etc, etc!! I don’t think I will ever be able to choose! What are your favourite ingredients for cooking?
These pork chops are marinated in a mixture of mustard, honey, cranberries and some other ingredients for an hour or two and then baked in an oven for 30 minutes and served with broken potatoes or mash… delicious!!
Ingredients:
4 pork chops
Salt and black pepper
60g craisins (dried cranberries)
45ml wholegrain mustard
45ml soya sauce
30ml honey
2 garlic cloves, minced
30m olive oil
zest of one orange
Wilted spinach topped with black pepper
Season the pork chops with salt and freshly grounded black pepper. Place into a glass dish.
Mix the craisins, mustard, soya sauce, honey, garlic, olive oil and orange zest together. Pour over the chops and marinade for an hour or two.
Preheat the oven to 180ºC. Place the chops on top of an oven pan and bake in the oven for 15 minutes. Turn over and bake for another 15 minutes.
Serve on top of wilted spinach with some broken potatoes or potato mash on the side.
