MIM 12: Lemon and Thyme chicken

I had a wonderful evening at Silwood Kitchen with compliments from Le Creuset and met some stunning fellow bloggers, but more about that another time. 

I have only time now to post a meal in minutes recipe. Most of you will agree with me that lemons are such a wonderful and versatile ingredient to cook with! Combined with thyme and used with chicken it is a winning combination. 

Ingredients:

8 chicken pieces (I used thighs and drumsticks)

Salt and black pepper

90ml wholegrain mustard

30m olive oil

45ml chopped fresh thyme

5ml turmeric

1 lemon sliced

extra fresh thyme for garnishing 

Preheat the oven to 180ºC.

Season the chicken with salt and freshly grounded black pepper.

Mix the mustard, olive oil, thyme and turmeric together. Brush over the chicken.

Place the chicken in a buttered oven dish.

Top with the lemon slices and bake for an hour.

Garnish with the extra thyme and serve with roasted or baked potatoes.
