MIM 9: Double tomato Mussel stew!

Double tomato Mussel stew! 

I so love tomatoes and anything made with it! What on earth can beat any salad containing tomatoes, especially in summer? In winter I love to make cheese and tomato sarmies, tomato soup, tomato stew with lamb and mussels with a double tomato sauce!

Serve this with any pasta of your choice or crusty homemade or bought bread and your family will lick their fingers!!

This is another meal that can be made in minutes!

For the first sauce:

15ml olive oil

1 onion, chopped

4 garlic cloves, chopped

1 x 410g tin tomatoes

30ml tomato paste

15ml capers

5 to 10ml minced chillies

15ml olives, pitted

15ml dill

salt and black pepper

Heat the olive oil and cook the onion and garlic over low heat for 4 minutes, until soft.

Add the tinned tomatoes, tomato paste, capers,chillies and olives and simmer for 15 minutes.

Add the dill and season with salt and black pepper and remove from the heat to cool down. Once cooled liquidize with a hand blender or fruit processor till smooth.

 For the second sauce:

15m olive oil

1 onion, chopped

1 x 410g tin tomatoes

60ml fish or chicken stock

1kg mussels in half shelves

salt and pepper

Heat the olive oil and cook the onion for 2 minutes until soft.

Add the tinned tomatoes and chicken stock and simmer for 10 minutes.

Add the first sauce mixture with the mussels.

Cook for 5 minutes and season to taste with salt and pepper.

Serve with pasta or bread!

    My son is hanging over my shoulder and drooling profusely. He loves mussel soup!!! I love the fact that it can be ready in no time at all!!

    Do you use frozen or fresh mussels – does it make a difference to the taste?

      Dirk, ek gebruik bevrore mossels. Ek persoonlik hou glad nie van vars mossels nie. Dit moet weer en weer gewas word om al die sand te PROBEER uit kry en dan moet dit in vars water wees om dit minder sout te maak… nee!
