Rolled Pork Belly cooked on Potatoes with stuffed baby apples

Rolled Pork Belly cooked on Potatoes with stuffed baby apples

Serves: 6
 
Ingredients
  • 2kg rolled pork belly
  • Salt and freshly ground pepper
  • 60ml lemon juice
  • 6 potatoes, peeled and sliced in thick slices
  • 30ml olive oil
  • 60ml chopped fresh thyme
  • 3 bay leaves
  • 6 baby apples
  • 60 g blue cheese
  • 30g pine nuts (I used walnuts), chopped and roasted
  • 6 small cinnamon sticks
Instructions
  1. Drizzle the one side of the roll with salt and 30ml lemon juice, place into a bowl and leave for 15 minutes, turn over and salt the other side, drizzle with lemon and again leave for 15 minutes.
  2. In the mean time pre-heat the oven to 180ºC. Place the sliced potatoes in the bottom of an oven proof dish. Season lightly with salt and pepper, add the chopped thyme and bay leaves and drizzle with the olive oil.
  3. Wash the pork belly with water and dry with a paper towl. Season again with salt, place on top of the potatoes and cover the dish and cook in the oven for 40 minutes. Turn over and cook for another 40 minutes.
  4. In the mean time prepare the apples. Cut off the top of the apples and remove the stalk. Remove the core of the apple and make a little hole. Be careful not to break the bottom of the apple.
  5. Mix the blue cheese and roasted walnuts and place into the apple holes.
  6. Replace the apple tops and insert the cinnamon sticks where the stalks use to be.
  7. Place with the pork in the oven dish and fry, without a cover for another 30 minutes.
  8. Remove from the oven and slice the pork roast and serve with the roasted apples and potatoes.

Serve with couscous with red peppers. Cook 250g couscous in accordance with packet instructions. Cube one red pepper and blanche in hot water, drain and mix together with 15ml butter with the couscous.

Also serve some red roasted vegetables such as red cabbage, beetroot and red onions with this. Place all the vegatables in a roaster with some minced garlic, fresh rosemary and salt and pepper. Drizzle with olive oil and bake in a pre-heated medium oven for 60 minutes.

    Your pork belly looks great. One of the variety of apples in my orchard are very small and I can’t wait to prepare them this fall stuffed like yours…delicious.
