This is a soup that you can make when you do not really feel like cooking! With just a few ingredients and not much effort you can have a comforting bowl of soup ready in minutes.
With the exception of me and BG none of my family members eat sweet potatoes! Can you believe this? Normally I only cook sweet potatoes if we have people over for supper or lunch. When I told Hubs that I am making soup with sweet potatoes he was very sceptical but in the end he said that we should make it again!
This soup uses chilli stock cubes, so food connoisseurs will have to pass. This recipe was given to me by my friend Jacky, who never knows about quantities! 🙂
200g chorizo sausages, sliced
15ml olive oil
4 sweet potatoes, peeled and diced
4 potatoes, peeled and diced
2 chilli beef stock cubes
1500ml hot water
salt and black pepper to taste
baby spinach leaves
Heat the olive oil and stir fry the chorizo in a large pot until browned. Remove from the pot.
Dissolve the stock cubes into the boiling water and add with the diced sweet potatoes and diced potatoes to the pot. Season with salt and pepper and bring to the boil. Reduce the heat and simmer for about 30 minutes until the vegetables are soft.
Remove from the heat and cool slightly.
Liquidise the soup in a food processor or with a stick blender.
Return to the pot and add the fried chorizo and heat again.
Dish up and top with shredded baby spinach leaves.
